Pinto Chipotle Hummus

You are five minutes away from heaven.

This is no time for modesty.

This is good....Seriously good. You simply have to try our delicious chipotle pinto bean hummus.

We whipped it up for an event that we recently catered for, guests tucked in to this while we prepared the main show - a Mexican Fiesta Buffet. See a spectacular review of that on the Fat Gay Vegan blog here.  So here's the recipe...

Yield: 1 healthy sized bowl
Serves: 2-4 depending on how hungry you are & whether you're willing to share!
Time: 5 mins 

  • 1 large garlic clove
  • 1 tin of cooked, rinsed pinto beans (rinsing removes any extra salt)
  • 1 tbsp of chipotle sauce (I picked up this little jar here in Waitrose)
  • 1 tbsp of tahini 
  • 1/2 tsp of cumin
  • Juice of one lemon
  • Salt and fresh ground black pepper to taste

Throw everything into a mixer and blend for one minute (depending on the power of the blender and how smooth you'd like it) . After that it's pretty much done - I like to swirl a little extra chipotle sauce and sprinkle with fresh coriander leaves. Serve with warm tortilla chips and watch it disappear!
